How to Prepare Homemade Chicken Masala Powder

I would love to share the best recipe for preparing this masala powder with you because, for a tasty dish, the right blend of masala is essential. That’s why I love cooking with this delicious masala. Variety of spices in one jar!



  1. Add a handful of curry leaves to a pan and dry roast them for a min on low, medium flame till it turns crispy. Remove from the heat and keep aside.
  2. Dry roast red chilies till it changes color a bit. Keep aside.
  3. Add coriander seeds, fennel seeds, cumin seeds, peppercorns, and fenugreek seeds to a pan, and roast them on a medium flame. You don’t need to get them browned.
  4. Stir together till the pleasant aroma comes. Keep aside and allow it to cool.
  5. In a mixer, granulate all the roasted ingredients into a fine powder.
  6. Store the masala in an airtight jar. The chicken masala powder is ready. Keep it out of the moisture by closing the lid tightly after every use.

  • Chicken –(2.20 lb.)
  • Oil (0.75fl. oz)
  • Onion (2, finely chopped)
  • Green chili (2)
  • Ginger Garlic Paste(0.75 oz)
  • Tomato chopped (2)
  • Turmeric powder(1/3 oz)
  • Chili Powder(1/6 oz)
  • Chicken Masala Powder(1.5 oz)
  • Salt (as per taste)
  • Few Coriander leaves
  • Few Mint leaves
  • Water(6 fl. oz)


  1. Heat oil in a wide saucepan; add finely chopped onions, green chili and sauté well until onions turn golden brown.
  2. Now add ginger garlic paste and fry it for 2-3 minutes.
  3. Add tomatoes, tomatoes, turmeric powder, chili powder, chicken masala powder and mix thoroughly.
  4. Add chicken to the masala mix and fry for about 5 minutes. Add salt and mix it well.
  5. When the masala and chicken are mixed well, and the chicken is no longer pink, then add water to the chicken. Cover the chicken and let it cook on a medium flame for about 10-15 minutes.
  6. When the chicken is half done, add coriander leaves and mint leaves to infuse the flavors. Close the lid again & cook the chicken.
  7. Finally, garnish it with coriander leaves and curry leaves (optional).
  8. The chicken masala is ready to be served. Serve with rice or Naan bread.

Serving (3-4)

  • Roughly Chopped Onion (2)
  • Green chili (1, finely chopped)
  • Ginger &Garlic Paste (0.5 oz)
  • Curry Leaf
  • Pepper Chicken Masala Powder(2 oz)
  • Chicken Breasts (2.2 lb. cut into bite-sized pieces)
  • Vegetable Oil (0.5 oz)
  • Black Peppercorns(0.5 oz, either whole or crushed)
  • Salt (as per taste)
  • Cilantro leaves (for garnish and cooked basmati rice for serving, optional)


  1. Take a pan and add the chicken, small amount of water, salt, and 2 ½ tsp of Chicken Masala Powder. Let it cook for 15 minutes.
  2. Heat 1 tbsp oil in a pan. Sauté chopped onion for few minutes
  3. Now add 1 tbsp ginger and garlic paste, chopped green chili, and curry leaves till onions turn golden brown.
  4. Add the cooked chicken and add 1 ½ teaspoon of Pepper chicken Masala and gravy of cooked chicken.
  5. Add half a glass of water for gravy. Let it cook for 15 minutes or until done.
  6. Garnish with crushed black peppercorns according to your taste and cilantro leaves.
  7. Serve with cooked rice or Naan bread.

I am here with a quick and easy recipe. If you’ve never had this dish before, just try it for once. By following the step by step instructions, anyone can ditch the restaurant meal.

Here’s what you need to cook this fantastically delicious recipe.

For Marinade

For Sauce

  • Garlic chopped (4 cloves)
  • Ginger (1, Julian)
  • Green Chillies (2)
  • Oil (2 fl. Oz)
  • Salt (as per taste)
  • Soy Sauce (1/3 oz)
  • Chilli Sauce (1/3 oz)
  • Tomato Ketchup (1/3 oz)
  • Chilli Chicken Masala Powder (1/3 oz)
  • Water (8 fl. Oz)
  • Onion Cubed (½)
  • Capsicum Cubed (½)
  • Cornflour (1/3 oz)
  • Spring onions for garnish


  1. In a mixing bowl, add boneless chicken, egg, cornflour, soya sauce, chili chicken masala powder and salt to taste.
  2. Mix well and marinate it rest for 15 minutes
  3. Heat oil in a pan to deep fry marinated chicken.
  4. Don’t over-crowd the pan, fry the chicken in batches. Fry until it turns dark brown
  5. Heat 4 tbsp. oil in a pan
  6. Add roughly chopped garlic, and Julian cut ginger and stir-fry for 2 minutes.
  7. Add green chilies, chili chicken masala powder, soy sauce, chili sauce, ketchup, and salt to taste.
  8. Stir fry for 3 minutes and then add a cup of water for gravy.
  9. Let it cook for a few minutes until it starts simmering.
  10. Add the fried chicken into the pan, add onion and capsicum.
  11. If the sauce is not thick enough, mix water and 2 tsp of cornflour and add to the chicken. Let it cook for 5 minutes.
  12. It’s ready to serve. Garnish with spring onions.
