Serving size: 3 people
Cooking time: 30 min
Unique features: Vegetarian, gluten-free, vegan-friendly

Ingredients

  • 1 cup of chopped basil leaves
  • Half an onion (sliced)
  • 1 bell pepper (sliced into thin strips)
  • 1 sliced zucchini
  • 3 minced cloves of garlic
  • 2 sliced chilies
  • 3 tablespoons of soy sauce
  • 2 diced shallots
  • 1 tablespoon of grapeseed oil
  • 14 ounces of cooked noodles
  • 2 and a half teaspoon of coconut sugar
  • 1 tablespoon of freshly squeezed lime juice
  • 8 sliced cherry tomatoes
  • Half a teaspoon of tamarind paste
  • A quarter teaspoon of white/black pepper

Let’s Start Cooking

  1. Add the garlic, chili, and shallots to a blender. Let them blend until you get a nice paste.
  2. In a separate bowl, add the sugar, soy, lime, pepper, and tamarind paste. Whisk it well until all the ingredients are incorporated.
  3. Get a big frying pan with a non-stick surface, sprinkle the oil, and let it heat on medium. Add the mix you prepared with the first step and let it simmer for a minute or two. Stir the paste until you get a thick and soft mixture.
  4. Add the tomatoes and the onion to the pan and let them cook for 3 minutes or until they get nice and soft.
  5. Pour in the sauce, beans, zucchini, and pepper, and keep stirring. Cover the pan with a lid and leave a slight opening until the ingredients are all cooked through (5 min). Stir from time to time.
  6. Pour in the noodles. Mix them well and cook for 2 minutes. Make sure to get every nook and cranny of the noodles submerged in the sauce.
  7. Take the noodles off the heat and add the basil. Cover the pan and let it sit for at least a minute.

Done! Your meal is ready to eat.
