To Prepare Gravy

  • Vegetable Oil for Frying Chicken(0.5 oz)
  • Butter or Ghee (1 oz)
  • Ginger Garlic Paste(0.5 oz)  
  • Tomato Passata(8 oz) 
  • Heavy / thickened cream (8 oz) 
  • Sugar (0.5 oz)
  • Salt (as per taste)

  1. In a large bowl, marinate the chicken by adding chicken and all the marinating ingredients and mix well. Set it aside and let it marinate for half an hour. You can leave it in the refrigerator overnight for a more delicious meal.
  2. In a cooking pan, add oil and fry the chicken on high flame for 3- 5 minutes (each side). Don’t wipe out the marinade from the chicken pieces.
  3. In a frying pan, heat butter over medium to high heat. Add ginger-garlic paste and stir-fry for 30 seconds. Now add Tomato Passata and cook it for 5 minutes. Now add chicken, cream, sugar, and salt. Let it simmer for 10 minutes at low heat.

  1. In a mixing bowl, add chicken, add ginger garlic paste, the spices, and mix well. Let it marinate for half an hour. You can leave it in the refrigerator overnight for a more delicious meal.

Step 2: Pan Fry

  1. Add some oil in a frying pan and heat it over medium heat. Add the marinated chicken and fry each side for three minutes or until chicken is cooked well.

Step 3: Gravy Preparation

  1. Add 2 tbsp. Butter and 2tbsp oil in a large wok and heat it over medium heat. Now add bay leaves, green cardamom, mace, and garlic. Keep stirring till garlic is starting to cook.
  2. Add Tomatoes and allow them to cook for 5 minutes or until soft. Add a little bit of salt to speed up the cooking of tomatoes. Now turn off the flame and let the mix cool for a while.
  3. Now add it in the mixer to grind into a fine paste. Strain the paste by pushing the mix with a spoon. Keep it aside.
  4. Heat some butter into the pan, add ginger and green chilies and simmer it for a minute. Now add tomato paste, Kashmiri Red Chilli Powder, Salt, allspice powder to the gravy and mix well.
  5. Now Add Cream, Honey, and cook for 2 to 3 minutes. You can also add water at this step if the gravy is too thick.
  6. Add the Pan Fried Chicken Pieces, Kasoori Methi to the Gravy, and mix well.
  7. Cover the cooking pan with a lid and simmer the gravy over medium heat for 10 minutes.

Step 4: Serving

  4. Season with salt if needed. Add the cream while stirring and cook it for another 5 minutes. Remove from heat.
  5. Garnish with coriander/cilantro leaves and a pinch of some more allspice powder. Serve over rice and with garlic naan bread. This dish is a winner!
