Furthermore, the slow cooking method needs less oil as mutton releases fats, and the use of less oil makes it healthy and a delicious option to go for. To make the meat tender, you can marinate it and keep it aside for some time. That’s how the cleaned meat absorbs the spices and gets tender.

Preparation Method

  1. First of all, take biryani rice and soak these grains in water
  2. Drain and wash the mutton in lukewarm water. Dry it and add the following ingredients into the mutton:
  3. Garam masala
  4. Salt
  5. Ginger-garlic paste
  6. Red chili powder
  7. Turmeric powder
  8. Curd
  9. Biryani Masala
  10. Place it in a neat and clean plastic bag and put it in a refrigerator so that the ingredients get marinated properly. It may take 2-4 hrs. (Longer the time is given, better the marination)
  11. Take a frying pan. Add oil into it. Add one tablespoon of cumin seeds. Now add the marinated mutton pieces and cook it for 10 minutes
  12. Wash the rice under running water and add them into the mutton stock
  13. Take a frying pan and one tablespoon of oil and cumin seeds into it. Also, add crushed cardamoms. Add cinnamon and green cardamoms and then fry them in oil for a few minutes
  14. Slice the onions thinly and fry them until they turn golden brown. Keep this golden-brown onion aside.
  15. Now take a utensil and add the mutton stock and rice in it. Cook until the rice is half-done. Along with that, add mint leaves and top it with fried onions.
  16. Now take a pipkin (thick bottomed pan). Add butter and one tablespoon of milk in it.
  17. Firstly, add the prepared mutton curry in it and, after that, add cooked rice. Shake it gently so that the mixture of mutton and rice gets evenly distributed in a pipkin
  18. Now add fresh cream and milk and cover the lid.
  19. Reduce the flame and let the rice cook for about 45 – 60 minutes. That’s it. Within an hour, your rice will be ready to be served.

2.     Hyderabadi Tawa Mutton Biryani Recipe

Tawa Mutton biryani is another good variant of biryani that is widely consumed in the sub-continent. Traditionally this dish is made with the ‘Dum Phukt method,’ but in this recipe, we will discuss an easy method named Tawa mutton biryani.  

Let’s discuss how we can prepare this biryani.

Servings (2-3 Persons)

Ingredients

  • Ghee (1 oz)
  • Sliced Onions (1 oz)
  • Ginger (0.7 oz)
  • Green Chilli (4)
  • Turmeric (0.2 oz)
  • Chili Powder (0.2 oz)
  • Salt (As per Taste)
  • Tomato (1.8 oz)
  • Fenugreek Powder (0.2 oz)
  • Semi-Cooked Mutton (In onion and Tomato Puree)
  • Water (1.7 fl. oz)
  • Coriander Leaves (0.2 oz)
  • Garam masala powder (0.1 oz)
  • Mint (0.1 oz)
  • Butter (0.4 oz)
  • Fresh cream (0.4 oz)
  • Lemon Juice (0.2 oz)

Preparation Method

  1. Initially, make a tomato and onion puree and semi-cook the mutton in this paste. Keep this semi-cooked mutton aside.
  2. Also, take 100 grams of rice and steam them. Keep them aside as well.
  3. Take a cooking pan and add two tablespoons of ghee in it. Also, add 25g of thinly sliced onions and let them cook for a few minutes.
  4. When it starts to get brown, then add ginger, green chilies, turmeric, chili powder, coriander powder, cumin powder and salt in the pan
  5. Mix these ingredients gently for a couple of minutes
  6. Now add tomatoes and fenugreek powder and let the entire mixture heat for a few minutes.  
  7. Now add the semi-cooked mutton into the frying pan. Along with this also add 50 ml of water. Cover the lid and let it cook for 5- 10 minutes
  8. After about 10 minutes, open the lid and add garam masala powder, mint, coriander leaves, butter, and fresh cream. Mix the ingredients evenly and then add 5grams of lemon juice.
  9. Now add the steamed rice into this mixture. Sprinkle with ginger, mint leaves, brown onion, and saffron water
  10. Cover the pan with a lid and let the rice simmer for 5-10 minutes. That’s it. Your tawa mutton biryani is ready to be served.

3.     Mutton Dum Biryani Recipe Hyderabadi Recipe

Mutton Dum Biryani is another variant of Hyderabadi biryani for biryani lovers. Let’s discover how this biryani can be prepared.

Servings (3-4 Persons)

Ingredients

  • Mutton (1 lb.)
  • Ginger garlic paste (0.5 oz)
  • Turmeric (0.1 oz)
  • Salt (As per taste)
  • Curd (8 oz)
  • Lemon Juice (0.5 fl. oz)
  • Red chili powder (0.7 oz)
  • Green chilies chopped (2)
  • Biryani Masala (0.1 oz)
  • Green Cardamoms (4)
  • Cloves (4)
  • Cinnamon pieces
  • Bay leaves
  • Strand Mace (1)
  • Black Cardamom (1)
  • Coriander leaves (1.5 oz)
  • Mint leaves (1.5 oz)
  • Oil (0.5 fl. oz)
  • Rice (1 lb.)
  • Saffron soaked in milk
  • Coriander (1 oz)

Preparation Method

  1. Cut the mutton into fine cubes. Wash the mutton carefully and drain off the water completely.
  2. Add ginger-garlic paste, salt, turmeric, biryani masala, and red chili powder.
  3. Now add fresh yogurt, fried onion spices, cloves, bay leaves, black cumin, black cardamom, mace, and green cardamom. Let them cook for a few minutes.
  4. Add chopped coriander, mint leaves, chopped green chilies, and lemon juice
  5. Pour 1tbsbp of oil. Mix everything well
  6. Cover the meat and refrigerate for about 4 hours so that the mixture gets marinated perfectly. Longer the margination time better the results
  7. In a frying pan, heat ¼ cup of ghee and fry a thin slice of one large onion. When they turn golden-brown, set them aside
  8. Soak good quality rice in water for about 30-40 minutes
  9. At least 40-60 minutes before starting cooking, take the mutton out of the fridge. It is good to bring it back to room temperature before cooking
  10. Take a large pot and add water to it. Add salt as per your requirement and let the water boil. Add bay leaves and cardamom.
  11. When the water starts boiling, add drained rice in it. Half cook the rice and place it aside
  12. Heat the milk and soak saffron. Add 1tbsp ghee to the pot and mix it well
  13. Layer the cooked rice and pour the saffron milk in it
  14. Mix 2 tbsp rice cooked water with ghee and pour it on the rice. Sprinkle coriander, mint leaves, and fried onions
  15. Place the lid and hold it tightly. When it gets completely airtight, place this pot on a hot griddle and cook for 45 minutes to 1 hour on light heat
  16. Make sure that the steam doesn’t escape during this process. After the set time, you will see the mutton dum biryani is ready.

Serve it with pickle and raita.
