Shrimp and Egg is a classic Chinese dish that combines delicate scrambled eggs with shrimp for a simple, delicious stir-fry that’s sure to be a new favorite on your table and a new comfort food staple. 

Scrambled eggs with shrimp is a popular comfort food dish in China, partly because it’s a rather hearty meal with simple flavors and also because it only takes 15 minutes to make.

It’s traditionally served with steamed rice to make a substantial meal and is great to eat any time of the day. 

White eggs and shrimp may seem like an unusual combination (especially if you’re not used to seafood with breakfast dishes, for example), but both ingredients complement each other well due to their delicacy and daintiness.

To make this dish, you’ll only need 8 ingredients working in harmony together. 

For those still unconvinced by the combination, the Shaoxing wine, and white pepper reduces the fishy taste of the shrimp. Meanwhile, the cornstarch protects the dish from overheating.

It stops the eggs from becoming overcooked and unpleasant and also keeps the shrimp juicy and tender.

The eggs are lightly seasoned with salt and green onions. This maintains the egg’s delicate flavor and doesn’t overpower the shrimp. This all makes for a delicate dish that is incredibly rich and satisfying at the same time. 

For an egg dish to really shine, I recommend using organic eggs. Not only is this better from an ethical point of view, but organic eggs are usually free of GMOs, antibiotics, and chemicals.

In organic egg farming too, there are usually little pesticides involved. You can tell if hens have been cooped up in cages by the richness of the yolks. Free-range eggs have a beautiful, orange hue.

The Cooking Process

While you’ll find a more in-depth step-by-step process to this recipe further down, I just wanted to briefly go over the cooking process first. This truly is the secret to creating super silky and soft scrambled eggs to pair with your shrimp!

First, briefly marinate the shrimp (more details on the marinade below). Then, gently pan-fry the shrimps but make sure not to brown them. 

Pour in the eggs and cook them until the bottom slightly sets. Push the set eggs to one side and let the runny eggs flow freely throughout the pan

Now, repeat the process but make sure to take the pan off the stove if the eggs start to set too fast.  Once the eggs achieve the texture you want, immediately transfer everything to a serving plate. 

Following these steps, you should achieve very creamy and soft eggs (check out our century egg recipe) cooked to the perfect texture. The light season adds a touch more flavor without overpowering the existing, delicious flavors.

Ingredients

  • 4oz (120g) of shrimp, peeled and deveined (small shrimp are best).

Marinade:

  • ½ tsp of Shaoxing wine
  • ¼ tsp of salt. This can either be kosher salt or a scant ¼ tsp of sea salt.
  • ⅛ tsp of white pepper
  • ½ tsp of cornstarch

Stir fry:

  • 4 organic eggs
  • ⅛ tsp of salt 
  • 1 tbsp of peanut oil
  • 1 sliced green onion

  • Cook time: 5 minutes

Instructions

  • Combine the shrimp with the marinade ingredients in a small bowl. Let it marinate for 5-10 minutes.
  • Combine the egg and salt in a medium-sized bowl. Using a fork or a pair of chopsticks beat the eggs until the yolks are fully broken apart and the eggs begin to froth.
  • Heat the oil in a medium-sized nonstick pan over medium heat until the oil is medium-hot. Add the marinated shrimp and let them cook for 30 seconds without touching them. When the bottoms turn white, flip the eggs and cook for a bit longer until they’re cooked through.
  • Remove the pan from the heat and pour in the beaten eggs. Allow the eggs to set around the edges and then gently push the set egg to one side and let the unset egg run into the pan.
  • Turn the heat to low and return the pan to the heat. Repeat the process of letting the eggs set slightly and pushing them to the side. If the eggs start to set too fast, remove the pan from the heat completely and let the residual heat cook the eggs. Cook until the eggs are slightly creamy, just cooked through, or until they’re done to your preference. Once done, transfer everything to a serving plate to ensure they don’t overcook. 
  • Garnish with green onions and serve immediately. While you don’t need any other seasoning with this dish, you can pair it with your favorite hot sauce!

How should I serve this dish?

I love these scrambled eggs with shrimp for a unique, fancy breakfast. You can add toast for extra crunch, and served with sparkling wine it makes for a special, thoughtful breakfast for Valentine’s Day, Mother’s Day, or a birthday.

You can also pair it with a side salad for a filling, yet quick and light lunch. 

If you’d like to make this dish for dinner, I recommend preparing steamed rice first so it can all be ready within 20 minutes and you don’t have to worry about the dish going cold.

If you’d like to add some greenery, you can wilt some baby spinach in the same pan you cooked the eggs in and season it with salt and pepper. Serve the spinach with the shrimp and scrambled eggs over your rice, and you have a perfectly balanced dinner!
