  • Lamb (1 lb. bone-intact or boneless) or mutton (marinate meat in salt and lemon juice for 1-2 hours for best results)
  • Ginger (1-inch” piece, grated)
  • Garlic Cloves (2-3, freshly grated)
  • Greek yogurt (5 oz)
  • Mustard/Vegetable oil (8 oz)
  • Kashmiri Red Chili Powder (0.3 oz)
  • Asafoetida (a pinch)
  • Saffron (a pinch) soaked in warm water
  • Salt (as per taste)
  • Roughly chopped coriander for garnish

For allspice powder

Method

  1. For allspice powder, grind all the ingredients in a mixer and set aside for later use.
  2. Marinade the lamb by adding whisked yogurt, ginger paste, grated garlic, and Kashmiri chili powder and salt to taste. Mix it well and let it marinate for 2-3 hours or leave it in the refrigerator overnight for the best effects. This process will help to tenderize the lamb.
  3. Heat the oil over medium heat in an enameled cast-iron cooking pot; add the asafoetida let it sizzle for 30 seconds. Add the marinated lamb along with its marinade and cook for 40 minutes until it turned brown. Stir continuously to prevent it from sticking on the bottom of the pan.
  4. Add allspice powder and let it simmer for 3-4 minutes. Now add the saffron water along with the strands. If it’s dry, then add some water. Cook it for 15-20 minutes over low heat until the lamb is tender and well-cooked.

  • Soak rice in water for about 30-45 minutes.

  • Vegetable oil for shallow frying
  • Paneer (18 oz)

For Gravy

  • Vegetable Oil (1 fl. oz)
  • Finely Chopped Onion (9 oz)
  • Ginger Piece (2-inch chopped)
  • Garlic Cloves (2, chopped)
  • Cumin Seeds (0.1 oz)
  • Coriander Seeds (0.1 oz)
  • Turmeric (0.1 oz)
  • Mild Chili Powder (0.1 oz)
  • Fresh Tomatoes Blended to a Puree (14 oz)
  • Pinch of sugar
  • Salt (as per taste)
  • Water (7 fl. oz)
  • Fresh /Frozen Green Peas (7 fl. oz)
  • Allspice powder (0.1 oz)

For Garnish

  • A handful of coriander for garnish

Method

  1. In a spice mixer, grind coriander seeds to a fine powder. Keep aside. Now grind the garlic and ginger to a smooth paste.
  2. Dab any excess moisture from paneer by using kitchen paper and cut into bite-size cubes.
  3. Shallow fry paneer cubes in a frying pan over medium heat for 2-3 minutes until they turn light brown. Drain the oil over kitchen paper and then add paneer cubes into warm water and let it soak. Meanwhile, prepare the gravy.
  4. In a cooking pan, heat oil over medium heat. Now add the finely chopped onions and let it simmer for 10-15 minutes. Stir occasionally till the color of onions begin to change. Now turn the flame low and add ginger and garlic paste. Sautee for 2 minutes and continuously stir so that it doesn’t stick to the bottom of the pan.
  5. Add the cumin, coriander powder, turmeric, and chili powder. Let it cook it for a minute and then add a splash of water and continue stirring so that it doesn’t stick to the bottom of the pan
  6. Pour the blended tomatoes into the pan and cook the gravy for 10 minutes over low hid. Close the lid. Stir occasionally through the entire cooking process. Add water along with the sugar and salt. Let it cook for five more minutes with the lid on.
  7. Add green peas along with the allspice powder. Now drain the water from the paneer and add paneer cubes to the gravy. Mix thoroughly so that all the pieces get coated well with the sauce. Let it cook for 2 minutes and turn the heat off.
  8. Matar Paneer Masala is ready to serve. Garnish with coriander leaves and serve with Nan Bread or Basmati Rice.
